This season fills me with bliss. It's cold, yes, but we naturally seek things that keep us warm. A bowl of potato soup, a family dinner, or a steaming mug of herbal tea. And to accompany those delights, indulge in one of these super-food tea cakes. They're healthy (gluten/grain/nut/sugar free) & delicious! Plus, they're beyond easy to make.
We all know how incredible maca root is. For thousands of years, it's been used as an aphrodisiac, a fertility booster, and a depression lifter. For more information on this super plant, check out this MindBodyGreen article by Dr. Jesse Chappus.
Maca Tea Cakes
makes 10 small slices
Ingredients
- 1/2 cup Sunbutter (or another nutless spread)
- 1/4 cup 1 tbsp coconut flour
- 1/2 cup shredded coconut
- 2 tbsp maca powder
- 1/2 cup coconut milk (full fat)
- 1 tbsp orange juice (optional)
- 2 tsp baking powder
- 1 tsp cinnamon
- 2 eggs
- 1/2 stick of butter, soft
- 2 tbsp raw honey
For the maca glaze:
1/2 tbsp maca powder
1/4 cup raw honey
1/2 tbsp coconut milk
1 tsp vanilla
A sprinkle of cinnamon
Preparation
Preheat the oven to 350 degrees.
In a blender, combine all the ingredients, and blend until a semi-thick batter forms. Yep, it's that easy. Pour the mix into a greased (important!) cake pan (mine was 2" tall and 10" around), and bake for about 40 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to rest out for a bit while you whisk all of the glaze ingredients together in a small bowl.
Pour this delicious mix over the top of the cake, and stick it in the fridge so that the top turns all sticky and beautiful.
Cut into ten slices and serve with your favorite tea.
