Strawberry Fig Salad with Creamy Balsamic Poppy Seed Dressing

Making homemade dressings avoids the processed, sugar-laden, store-bought versions and allows you to experiment with different flavors and textures that can make an average salad amazing.
This Strawberry Fig Salad provides a nutrient-dense meal that includes a serving of fruit and a dose of calcium and protein. The Creamy Balsamic Poppy Seed Dressing is the star of this recipe. Made with plain yogurt (I like siggi's), the dressing is decadently creamy, yet healthy.
Serves 2
Creamy Balsamic Poppy Seed Dressing
Ingredients
- 1 container (150g) siggi’s 0% milkfat plain yogurt
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- ½ teaspoon sea salt
- 1 teaspoon poppy seeds
Strawberry Fig Salad
Ingredients
- 2 cups arugula
- 4 strawberries, sliced
- 4 figs, sliced
- 1 tablespoon goat cheese
- 1 tablespoon sliced almonds, toasted
Preparation
In a skillet over medium heat, toast the sliced almonds for approximately 2-3 minutes. Shake the pan frequently to make sure they don’t burn. Transfer to a plate and set aside.
Divide arugula into two bowls. Top with strawberries, figs and goat cheese. Sprinkle with toasted almonds and drizzle with creamy balsamic poppy seed dressing.
