Steamed Artichoke with Tart Lemon Dip

Artichokes are one of my all time favorite foods. Not only are they delicious, they are filling, full of fiber and fantastic for your liver. Nutritional yeast is full of protein and B-vitamins, which makes it a popular choice for vegetarians or if you simply love the fantastic full taste. This is great as a snack, appetizer or meal with a great soup.

2 cloves garlic, smashed in skin

1 bay leaf

juice of 1 lemon

3-4 T nutritional yeast

1/4 cup extra virgin olive oil

1 artichoke, trimmed if necessary

good pinch Maldon sea salt

Place bay leaf and garlic in the water at the base of your steamer. Steam artichoke for 30-45 minutes.

Mix olive oil, lemon juice, nutritional yeast and sea salt. Place into a small bowl. Dip leaves (and heart once you get there) into dressing and savor every bite!
