This week I was in the mood for something different. I wanted something that captured all of the above tastes in one dish. As a result, I thought of this recipe, and to my surprise it hit all the right spots. It's sweet, salty, tangy and spicy — all in one! My family and friends loved it and kept going back for more. It tastes great with tortillas chips or just as is. This recipe is going to be a definite keeper in our household. I hope you'll give it a try and see for yourself.
Ingredients
- 4 sweet potatoes, chopped in cubes
- 1 green apple, chopped
- 1 medium red onion, thinly sliced
- 1/2 tsp. cumin powder
- 1/2 tsp. mango powder or pomegranate seed powder
- 1/2 tsp. ginger powder
- 1/2 tsp. nutmeg powder
- 1/2 tsp. coriander powder
- 1/4 tsp. clove powder (optional)
- 1/2 tsp. black salt
- 1/4 tsp. chili powder
- olive oil
- 1 Tbsp. lemon juice
- mint leaves chopped
- sea salt and black pepper to taste
Directions
In a pan, saute the sweet potatoes in some olive oil. Stir and toss every few minutes and cook until soft.
Let cool.
Toss the rest of the ingredients together with the sweet potatoes and mix.
Adjust seasoning to taste.
