Raw Cacao Almond Truffles With Superfoods

Whether you're rollin’ solo this Valentine’s Day or you have a boo to spend time with remember, the day is always better with truffles (any day is better with truffles. It’s just a fact).

Make these with love and they will taste even sweeter (because people can taste love in food. If you don't believe me, read Like Water for Chocolate)

Superfood Raw Cacao Almond Truffles

Ingredients

  • 3/4 cup unsalted almond butter
  • 6 dates, pitted and soaked in hot water for 10 minutes
  • 1/2 cup raw cocoa nibs
  • 1/4 cup hemp seeds
  • 2 teaspoons vanilla
  • 1/8 teaspoon sea salt

Toppings

1/4 cup shredded coconut or 1/8 cup walnuts and 1/8 cup goji berries, processed in the food processor until chopped up.

Directions

Place almond butter, dates, cocoa nibs, hemp seeds, vanilla and sea salt in a food processor and process for 1-2 minutes, until everything is completely combined.

Place mixture in a bowl and scoop out, 1 tablespoon at a time and roll into balls. Continue until all of the mixture has been rolled into balls.

Place the topping of your choice into a bowl and take each ball and press it into the topping, pressing the mixture into the truffle.

Place truffles in the refrigerator and refrigerate for 2 hours.

Keep truffles in the fridge or freezer.

Notes

If you prefer to not give them a topping, they are yummy plain.

If you do add the topping then you will really have to press the mixture into the truffle because it’s tricky to make it stick.
