I am a former Girl Scout Thin Mint cookie addict.
Sadly, our love affair came to an end recently after I learned about all the artificial, genetically modified, and potentially toxic wheat-, soy-, corn-, and dairy-based ingredients in every delicious box. Here are just a few:
- enriched white flour
- sugar
- partially hydrogenated palm kernel
- soybean
- cottonseed with TBHQ for freshness
- caramel color
- whey
- cornstarch
- soy lecithin
- natural and artificial flavor
I still buy a few boxes every year and hand them out to friends and co-workers to support the local Girl Scout troops … I just don’t eat them.
I found a solution to cure my Thin Mint ails though. While testing hundreds of combinations for my new protein powder, I created a recipe that tastes even better than a Thin Mint AND is loaded with healthy, plant-powered, real-food ingredients.
This grape, mint, and kale smoothie recipe has just 6 grams of sugar, 4 grams of protein, 5 grams of belly-filling fiber, and tons of antioxidants and polyphenols per serving.
Enjoy this recipe as is, or toss in a scoop of protein powder after a workout to get a perfectly balanced blend of macronutrients.
Kale Thin Mint Smoothie (Vegan)
Serves 2
Ingredients
- 1 cup organic kale
- ¼ cup fresh organic mint
- 2½ tablespoons organic cacao powder
- ½ banana
- ¼ cup organic purple or black grapes
- 2 cups almond, coconut, or cashew milk
- 1 large handful of ice
Preparation
1. Rinse the kale, grapes, and mint leaves and remove the stems.
2. Blend all ingredients together for 30 seconds and serve.
Note: You can substitute water for almond milk.
