Ginger-Mint Comfort Tea

I’m not sure how I managed to score a head cold in sunny Florida but I’m back in California where the sun still shines but my head is preventing me from any frolicking fun. This homemade tea is my go-to comfort drink in times of sickness or when I just want some comfort. I personally like the tea as listed below, but feel free to add a dollop of honey for sweetness.

2 cups water

3-4 fresh mint leaves

1/2 lemon, juiced

1/4 inch fresh ginger, peeled and sliced

Place a teapot of water on the stove and bring to a boil. Meanwhile, peel your ginger root using the top of a spoon dragging it along the skin to remove. Slice the ginger into fine slices. Place your ginger, lemon juice and mint leaves into your mug and add hot water. Find peace and happiness.
